Vegan Hummingbird Cake

While testing our what dessert to serve for my Vegan New Year Yummies Event, I came across this recipe and decided to veganize it.

This cake usually has a thick icing, but I don’t like icing. I always use glaze on my cakes.

It’s a very moist cake and a bit dense. And boy does it deliver on making your heart hum :).

Here’s My Recipe:

Ingredients

CAKE
2 1/2cups all-purpose flour

1 tsp baking soda
1 tsp ground cinnamon

1/4 tsp ground nutmeg

1/2 tsp salt

1 1/2 cup organic sugar

3 vegan eggs, I used a bottle vegan egg equivalent

1 cup vegetable oil

1 tsp vanilla extract

1 1/2 cups mashed overripe bananas or food processed underripe bananas

1 cup food processed fresh pineapple*

1 cup walnuts, chopped

3 TBSP flour

1 TBSP Vegan butter

GLAZE

1 cup organic powdered sugar

5 TBSP pineapple juice

Vegan Hummingbird Cake

Instructions

  1. Whisk or sift all dry ingredients together.

  2. Once thoroughly mixed, add in all wet ingredients and nuts.

  3. Mix together with a hand mixer until well incorporated.

  4. Pre-heat oven to 350 degrees Fahrenheit.

  5. Flour and butter a cake pan of your choice. I used a loaf pan.

  6. Pour in cake mixture and bake for 20 - 25 minutes.

  7. Let cool and glaze cake.
